Answer sheet (for the quizmaster)

  1. 1. A - Victoria sponge
A Victoria sponge is two sponge layers with jam and buttercream (or whipped cream), dusted with icing sugar. Traditionally named for Queen Victoria, who enjoyed a slice with her afternoon tea.
  2. 2. B - Battenberg
A Battenberg hides a four-square checkerboard of pink and yellow sponge inside a marzipan wrap. It was created for the 1884 wedding of Queen Victoria's granddaughter to Prince Louis of Battenberg.
  3. 3. A - Lemon drizzle cake
The lemon drizzle is a loaf or round cake poked all over and soaked in a sharp lemon sugar syrup while still warm, giving that glistening, crackled top.
  4. 4. C - Black Forest gateau
Black Forest gateau layers chocolate sponge with whipped cream and cherries, and gets coated in chocolate shavings. It is named after the Black Forest region of Germany and its cherry liqueur, kirsch.
  5. 5. A - Carrot cake
Carrot cake is a moist spiced sponge with grated carrot and often walnuts, and the classic topping is cream cheese frosting. The carrots mostly melt into sweetness rather than tasting vegetabley.
  6. 6. B - Red velvet cake
Red velvet gets its deep crimson crumb (historically from cocoa plus a little food colouring) and is always paired with a tangy cream cheese or ermine frosting.
  7. 7. B - Macarons
Macarons are two smooth almond meringue shells with ruffled 'feet' sandwiching a filling. They are a French patisserie classic and a notorious Bake Off technical challenge.
  8. 8. A - Coffee and walnut cake
Coffee and walnut cake pairs coffee-flavoured sponge and buttercream with walnut halves on top. It was the very first technical challenge on The Great British Bake Off.
  9. 9. A - Swiss roll
A Swiss roll is baked in a shallow tray, rolled while still warm (sometimes with a damp tea towel) and unrolled to fill once cool.
  10. 10. A - Flour, butter, sugar and eggs
You weigh the eggs, then use the same weight of butter, sugar and flour. That is why recipes say a '4oz' or '6-egg' Victoria sponge.
  11. 11. C - Paul Hollywood
Paul Hollywood has judged every series since 2010. Mary Berry left after the 2016 move to Channel 4, and Prue Leith joined in 2017.
  12. 12. C - Green
The classic prinsesstårta is domed and wrapped in green marzipan with a pink marzipan rose on top. It is filled with pastry cream, jam and whipped cream.
