About this course

A supervisory food safety programme for those who manage food handlers or own a food safety management system. It covers the law, hazard analysis, and how to implement and monitor safe practice across a team.

Delivered as a structured multi-unit course with substantial study time, it provides the underpinning knowledge for a regulated Level 3 qualification.

Course content

The course is delivered in short, bite-size sections that learners can stop and restart at any point.

  1. Section 1

    Law and responsibility

    Duties of food business operators, enforcement powers, due diligence and record keeping.

  2. Section 2

    Microbiology and contamination

    Pathogens, spoilage, allergens and physical and chemical hazards.

  3. Section 3

    HACCP

    Hazard analysis, critical control points, critical limits, monitoring and corrective action.

  4. Section 4

    Supervising the team

    Training, standards, monitoring, coaching and managing non-compliance.

Who it is for

Supervisors, head chefs, food business owners and managers responsible for food safety in catering, manufacturing or retail.

Entry requirements: Level 2 food safety knowledge or relevant experience is recommended.

Learners work through the course at their own pace and can pause and resume where they left off.

How it is assessed

Interactive knowledge checks run throughout each unit. The regulated qualification is awarded on successful completion of an externally set examination, which can be sat with a recognised training centre or at home using remote invigilation. We can arrange the exam booking for you.

Certification

On successful completion of the course and examination, learners receive a regulated Level 3 qualification certificate. A course completion certificate is issued for the e-learning element itself.
