About this course

This Level 3 course is written for people who develop and manage HACCP systems in food manufacturing, where processes, volumes and audit expectations are more demanding than in catering.

It covers prerequisite programmes, hazard analysis across the production process, CCP determination, validation and verification, and the documentation that third-party audits and customers expect to see.

    Context and prerequisites

    Food safety law, customer and audit standards, and the prerequisite programmes HACCP relies on.

  2. Section 2

    Building the plan

    The HACCP team, product specification, intended use, and an accurate verified flow diagram.

  3. Section 3

    Analysis and control

    Hazard analysis, decision trees, critical limits, monitoring equipment and calibration.

  4. Section 4

    Assurance

    Corrective action, traceability and recall, validation, verification, audit and review.

Who it is for

Technical, quality and production managers, HACCP team members, and supervisors responsible for food safety systems in manufacturing, processing or packing.

Entry requirements: A Level 2 food safety qualification, or equivalent working knowledge, is strongly recommended before starting.

How it is assessed

Knowledge checks run throughout the course so learners can test understanding as they go. The course ends with a multiple-choice assessment taken online. Learners who do not pass first time can retake it.

Certification

Learners receive a Highfield Online Training digital certificate as soon as they pass the end-of-course assessment. Certificates download straight away and can be saved to a CPD log or staff training record.

Refresher guidance: Most employers refresh this training every three years, with a shorter annual refresher in between.
